The subject "Biochemistry of food and biochemical laboratory methods" deals with non-traditional presentation of the subject with emphasis on dynamics of processes taking place in food predominatingly of animal origin. There has been laid an important link between chemical composition of foodstuffs and its part i. e. chemistry of technological processes and biochemical processes taking place in food and raw materials of animal origin during their production, maturing, storage, and possibly decomposition. This conception is also important to assess intravital effects affecting properties of final foodstuffs with regard to their safety and quality. Students get acquainted with biochemical laboratory methods during the course of laboratory practicals.
