Course content
Lectures 1. 4 hours Automated system used in detection and identification of microorganisms: TEMPO system, VITEK system, Biolog system, biosensors, mass spectromectry MALDI-TOF. Modern methods used in food microbiology. Immunological techniques and their use in food microbiology: agglutination techniques, ELISA, ELFA, LFIA. Indirect methods: electric methods, radiometry, LAL test, ATP-bioluminescence method. 2. 4 hours Molecular-biological methods used in food microbiology. DNA isolation, polymerase chain reaction, real-time PCR, hybridisation techniques, microarrays. 3. 4 hours Rezistance to antimicrobial agents importance, methods of detection. The disk diffusion method, agar dilution method, microdilution method, E-test, detection of resistance genes. Assignment case studies. 4. 4 hours Bacterial toxins in food importance, methods of detection. Methods for detection of staphylococcal enterotoxin, methods for detection of toxins produced by Bacillus cereus, determination of botulotoxins. 5. 4 hours Foodborne diseases methods used in epidemiology. Serotyping, phagotyping, PFGE, PCR with restriction digestion, VTNR (MLVA). 6. 4 hours Foodborne diseases - a case study
